This delicious sheet pan recipe is perfect for a quick and easy dinner or meal prep option. The roasted Brussels sprouts and garlic tofu pair perfectly together with a savory and slightly sweet flavor profile. Plus, it’s vegetarian and can be made vegan by omitting the honey.
Ingredients
- 1 block (14 oz) extra-firm tofu, pressed and cut into cubes
- 1 lb Brussels sprouts, trimmed and halved
- 4 cloves garlic, minced
- 3 tbsp olive oil
- 2 tbsp honey (optional for vegan option, substitute with maple syrup)
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- Salt and pepper to taste

Going Step by Step
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, garlic , honey (if using), soy sauce, and rice vinegar.
- In a large mixing bowl, toss together Brussels sprouts and 2 tbsp of the olive oil mixture until evenly coated.
- Arrange the Brussels sprouts on a large sheet pan and roast for 15 minutes.
- Remove the sheet pan from the oven and add the cubed tofu to the pan, drizzling the remaining olive oil mixture on top of the tofu.
- Return the sheet pan to the oven and continue to roast for an additional 10 minutes, or until the tofu is slightly golden and the Brussels sprouts are tender.
- Season with salt and pepper to taste.
