Ingredients

  • 1 medium sweet potato, peeled and diced
  • 1 can (13.5 oz) unsweetened coconut milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup chia seeds
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp sea salt

Going Step by Step

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Place the diced sweet potato on the baking sheet and roast for 20 minutes or until tender.
  3. In a medium-sized mixing bowl, whisk together the coconut milk, maple syrup, vanilla extract, cinnamon , nutmeg, and sea salt.
  4. Add the chia seeds to the bowl and mix well.
  5. Once the sweet potato is roasted, add it to the bowl and mix well.
  6. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight.
  7. When ready to serve, give the pudding a good stir. You can serve it as is or top it with your favorite fruits or nuts.
