Ingredients
- 1 cup granulated sugar
- 1/4 cup cannabis butter
- 4 large eggs
- 2/3 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
Going Step by Step
- In a medium-sized bowl, whisk together the sugar and cannabis butter until light and fluffy.
- Add the eggs, one at a time, whisking well after each addition.
- Whisk in the lemon juice and lemon zest until well combined.
- Transfer the mixture to a heatproof bowl and place over a pot of simmering water. Make sure the bowl is not touching the water.
- Cook the mixture, whisking continuously, until it thickens and coats the back of a spoon, about 10-15 minutes.
- Remove from heat and strain the mixture through a fine-mesh sieve into a clean bowl.
- Cover the surface of the lemon curd with plastic wrap to prevent a skin from forming and refrigerate until chilled, about 1 hour.

Tips
