Ingredients

  • 4 ears of fresh corn on the cob
  • 2 tablespoons cannabis-infused olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup cotija cheese, crumbled
  • 2 tablespoons fresh lime juice
  • 1 tablespoon fresh cilantro, chopped

Going Step by Step

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, combine cannabis-infused olive oil, chili powder, smoked paprika, garlic powder, salt, and black pepper.
  3. Peel back the husks of the corn, but keep them attached. Remove the corn silk.
  4. Brush each ear of corn with the cannabis-infused spice mixture, making sure to coat all sides evenly.
  5. Place the corn on the grill and cook for about 10-12 minutes, turning occasionally, until nicely charred.
  6. In the meantime, prepare the cotija cheese sauce. In a separate bowl, mix together mayonnaise, sour cream, cotija cheese, lime juice, and cilantro until well combined.
  7. Once the corn is grilled to perfection, remove from the heat and let it cool slightly.
  8. Using a brush or spoon, generously coat each ear of corn with the cotija cheese sauce.
  9. Serve your Elevated Elote immediately, garnished with additional cotija cheese and cilantro if desired.

Tips

  • For an extra kick, sprinkle some cayenne pepper or hot sauce on top of your Elevated Elote.
