Chicken Curry Soup is a delicious and hearty dish that is perfect for colder weather or when you're in need of a cozy comfort food meal. Ingredients

  • 1 tbsp cannabis-infused oil
  • 1 lb boneless, skinless chicken breasts, cut into cubes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp cayenne pepper
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 can (14 oz) chickpeas, drained and rinsed
  • 1/2 cup coconut milk
  • Salt and pepper, to taste
  • Chopped fresh cilantro, for garnish

Going Step by Step

  1. In a large pot or Dutch oven, heat the cannabis-infused oil over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set it aside.
  2. Add the onion to the pot and cook until softened and translucent, about 5 minutes. Add the garlic, curry powder, cumin, cinnamon, ginger, and cayenne pepper and cook for an additional 1-2 minutes, until fragrant.
  3. Add the chicken broth, diced tomatoes, and chickpeas to the pot and stir to combine. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, until the soup has thickened slightly.
  4. Add the cooked chicken back to the pot, along with the coconut milk. Stir to combine and let the soup simmer for an additional 10-15 minutes, until the chicken is cooked through and the soup has thickened to your liking.
  5. Season the soup with salt and pepper, to taste. Serve hot, garnished with chopped fresh cilantro.
