Spanish rice, also known as Mexican rice, is the ideal base for a variety of different recipes including chicken fajitas and shrimp enchiladas. With its vibrant colors and rich flavors, this versatile dish is sure to satisfy your taste buds.

Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons cannabis-infused olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño pepper, seeded and minced (optional)
  • 1 cup tomato sauce
  • 1 3/4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Going Step by Step

  1. Heat the cannabis-infused olive oil in a large skillet over medium heat.
  2. Add the diced onion, minced garlic, red bell pepper, and jalapeño pepper (if desired). Sauté until the vegetables are tender and lightly browned.
  3. Stir in the white rice and cook for an additional 2 minutes, allowing the rice to absorb the flavors.
  4. Add the tomato sauce, vegetable broth, cumin, paprika, salt, and pepper. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Remove from heat and let the rice sit, covered, for 5 minutes to allow the flavors to meld together.
  7. Fluff the rice with a fork and garnish with fresh cilantro.
