- 1/2 cup maple syrup
- 1/4 cup lemon juice
- 1 teaspoon vanilla extract

- Vegan chocolate chips (optional, for topping)
Going Step by Step
- In a medium-sized bowl, combine the graham cracker crumbs and melted coconut oil. Mix well until the crumbs are evenly coated.
- Press the crumb mixture firmly into the bottom of a lined square baking dish. Place it in the refrigerator to chill while you prepare the filling.
- In a high-speed blender or food processor, combine the soaked cashews, coconut cream, maple syrup, lemon juice, vanilla extract, and salt. Blend until smooth and creamy.
- Pour the filling over the chilled crust in the baking dish, spreading it out evenly with a spatula.
- Optional: Sprinkle vegan chocolate chips on top of the filling for an extra touch of sweetness.
- Place the baking dish in the freezer and let it set for at least 4 hours or until firm.
- Once the cheesecake is set, remove it from the freezer and cut it into bite-sized squares.
- Serve chilled and enjoy!
- Give it a try and enjoy!
Tips
- Soaking the cashews overnight helps to achieve a smoother texture for the filling.
- If you don’t have coconut cream, you can use full-fat coconut milk instead.
- Experiment with different toppings like fresh berries, shredded coconut, or crushed nuts for added flavor and texture.
