  • 9 lasagna sheets
  • 2 cups vegan-friendly marinara sauce
  • 2 cups vegan ricotta cheese

  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil

Going Step by Step

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add garlic and onions, and sauté until onions become translucent.
  3. Add mushrooms, zucchini, and bell peppers to the skillet. Cook for 5-7 minutes until the vegetables become tender.
  4. Stir in spinach and cook until wilted. Season with dried basil, dried oregano, salt, and pepper. Mix well.
  5. In a separate pot, bring water to a boil. Cook lasagna sheets according to the package instructions until al dente. Drain and set aside.

  10. Repeat steps 7-9 for the second layer.
  11. Top the lasagna with the remaining marinara sauce, spreading it evenly over the vegetables.

  13. Cover the baking dish with foil and bake for 25 minutes.
