Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped

Going Step by Step

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large frying pan over medium heat. Add the onion and sauté until translucent.
  3. Add the garlic and ginger to the pan and cook for another minute.
  4. Sprinkle the cumin, coriander, turmeric, garam masala, and chili powder into the pan. Stir well to coat the onions and garlic with the spices.
  5. Add the diced potatoes and carrots to the pan. Cook for about 10 minutes, until the vegetables are slightly softened.
  6. Stir in the frozen peas, sunflower seeds, and pumpkin seeds. Season with salt to taste. Cook for an additional 5 minutes.
