The combination of split peas and aromatic spices creates a comforting dish that will leave you feeling satisfied and uplifted.

Ingredients

  • 1 cup dried split peas
  • 4 cups vegetable broth
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 2 teaspoons cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Going Step by Step

  1. Rinse the dried split peas under cold water and drain.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, celery, and minced garlic. Sauté until the vegetables are tender and fragrant.
  3. Add the dried split peas to the pot and stir well to combine with the sautéed vegetables.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat to low and let the soup simmer for about 1 hour, or until the split peas are soft and tender.
  5. Stir in the cumin, turmeric, paprika, cinnamon, salt, and pepper. Allow the flavors to meld together for another 10 minutes.
  6. Remove the pot from the heat and let the soup cool slightly. Using an immersion blender or a countertop blender, blend the soup until smooth and creamy.
  7. Return the soup to the pot and heat gently if needed. Adjust the seasonings according to your taste preferences.
  8. Ladle the cannabis-infused vegetarian split pea soup into bowls and garnish with fresh parsley.
  9. Give it a try and enjoy!

Tips

  • Soaking the split peas overnight can help reduce the cooking time.
  • Feel free to add additional vegetables such as potatoes or bell peppers to enhance the flavor and texture of the soup.
  • Customize the spice level by adjusting the amount of cumin, paprika, and cinnamon to suit your taste.
  • Serve the soup with a drizzle of olive oil or a dollop of yogurt for added richness.
