Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 1 cup spinach, roughly chopped
  • 1/2 cup cherry tomatoes, halved
  • 6 eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup shredded cheddar cheese

Going Step by Step

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the onion and red bell pepper and cook until softened, about 5 minutes.
  4. Add the spinach and cherry tomatoes and cook until the spinach is wilted, about 2 minutes.
  5. In a medium bowl, whisk together the eggs , milk, salt, and black pepper.
  6. Add the cooked vegetables to the egg mixture and stir to combine.
  7. Pour the mixture into a greased 9-inch pie dish.
  8. Sprinkle the shredded cheddar cheese over the top of the mixture.
  9. Bake in the preheated oven for 30-35 minutes, or until the quiche is set and the top is golden brown.
  10. Let cool for a few minutes before slicing and serving.
