This is every pumpkin lover's dream version of the Nanaimo bar. The combination of rich chocolate, pumpkin, and a hint of weed makes these bars a delightful treat for any occasion. So, let's get cooking!
Ingredients
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1/3 cup unsweetened cocoa powder
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 2 cups graham cracker crumbs
- 1 cup shredded coconut
- 1/2 cup chopped walnuts or pecans
- 1/2 cup canned pumpkin puree
- 2 tablespoons cannabis-infused coconut oil (adjust potency as desired)
- 2 cups powdered sugar
- 1/4 cup unsalted butter, softened
- 1/4 cup milk
- 8 ounces semi-sweet chocolate, chopped
- 1 tablespoon cannabis-infused coconut oil
Going Step by Step
- In a medium-sized bowl, combine the melted butter, granulated sugar, cocoa powder, beaten egg, and vanilla extract. Mix well until smooth.
- Add the graham cracker crumbs, shredded coconut, chopped walnuts or pecans, pumpkin puree, and cannabis-infused coconut oil to the bowl. Stir until all ingredients are evenly incorporated.
- Press the mixture firmly into the bottom of a greased 9x9-inch baking dish.
- In a separate bowl, combine the powdered sugar, softened butter, and milk. Beat until smooth and creamy. Spread this mixture over the crust in the baking dish.
- Place the baking dish in the refrigerator and let it chill for at least 1 hour.
- In a microwave-safe bowl, melt the semi-sweet chocolate and cannabis-infused coconut oil together in 30-second intervals, stirring in between, until smooth.
