Unlike most pound cakes that call for sour cream to achieve that dense, moist center, this version requires yogurt, and you can use any kind you want.
Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 cup plain yogurt
Going Step by Step
- Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
- Stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the yogurt. Begin and end with the dry ingredients, mixing just until combined.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 1 hour, or until a toothpick inserted into the center comes out clean.
- Remove the pan from the oven and let the cake cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
- 10. Slice and serve the delicious Yogurt Pound Cake.
- Give it a try and enjoy!
Tips
- For a variation, you can add lemon zest or poppy seeds to the batter.
- Ensure the yogurt is at room temperature before adding it to the mixture for smoother blending.
- If you prefer a sweeter cake, you can sprinkle powdered sugar on top or drizzle with a glaze made from powdered sugar and lemon juice.
